All about Hummus
Hummus is such a joy to eat and so simple to make. I love the versatility of hummus and how one can introduce other flavours to it.
Beetroot hummus, sweet potatoes, roasted peppers and spinach hummus are just a few flavours and colours to match. I remain a fan of the simple authentic hummus.
Ingredients
- 1 can of chick peas 
- 1 whole lemon 
- 1 Tbs Tahini paste 
- Olive Oil 
- Salt to taste 
- 2 garlic cloves (I like mine roasted) 
Method
- Drain the chick peas (reserve some of the juice) 
- Rinse in water and rub gently between your palms to remove the skin (you can retain for more fibre, but pass through a mesh for a smooth hummus) 
- Put in a food processor with the rest of the ingredients and blend until smooth 
- Adjust the seasoning and add more lemon juice if needed 
- Serve with a drizzle of olive oil and garnish with toasted pine nuts or pomegranate seeds for a pop of sweetness 
Varieties - Add roasted beetroots, sweet potatoes, roasted peppers or spinach for more variety
